All Greek To Me: Visions of Vacation

All Greek To Me: Visions of Vacation

The past few weeks have truly been cold, miserable, a have sucked the joy and happiness out of just about everything. All it makes me want to do is daydream of somewhere sunny, warm, and far away from work and from the day-to-day crap that we all wish we didn't have to do. Since I'm not planning on going anywhere like this, I can at least have fun with the idea! I've recently been into everything Greek, and by Greek I mean Greek Islands. The blue Aegean, sun-soaked, whitewashed houses clinging to the sides of cliffs, surrounded by crystal blue water, topped off with little blue-domed houses dotting the skyline! That sort of scenery pairs perfectly with linen tees, slouchy jeans and some strappy, flat sandals. Don't forget a giant bag to hold all of your chicken souvlaki and pounds of feta cheese! I've really been digging the whole deep blue and white combo and decided to make a little tribute to the simple, yet beautiful pair. So, if you're in a winter slump, don't be blue, get some beautiful Grecian blue in your life! And besides, it's nothing a little ouzo and baklava can't fix! Opa!

Best of British: Tea Towel Edition!

Best of British: Tea Towel Edition!

Best of British: Tea Towel Edition! by elbonner featuring pink kitchen towels

I've decided to do a little series about my British favorites: food, clothing, home wares, the whole lot of it! I usually spend a lot of time talking about faraway tropical beaches and forget the cold, rocky beaches I played in as a baby. They're as much a part of my love for the ocean as all the other beaches I've been to, so I want to show a little more appreciation for what makes me love Britain so much! It also gives me an opportunity to share with you some cool things I have discovered on my travels that I think the readership (you people!) would enjoy!

This week, we pay homage to the tea towel; not a total British invention, but the ones you find in the UK, whether it be from a home store or a tourist shop, tea towels are anything but just a dish rag! My favorite place to get really cute and clever tea towels are from a website called To Dry For. They stock some of the most adorable, smile-worthy tea towels on the planet and every time I go there I find myself wanting all of them! I have a few from them and they are going on five years of heavy use and show little signs of wear. Some of them are so cute I'd rather frame them than use them!
The designs feature themes like classic British foods like fish'n'chips, biscuits, and cakes. They also have super cute, very British sayings, and fun things to brighten up any kitchen! They are your typical cotton, sort of flour-sack material which makes them super absorbent and easy to clean! They do a great job of drying up your dishes and also hang and iron nicely. They ship worldwide and the prices range from £9-£13, which some would say is a bit much for a tea towel, but they do stay bright and fun after many washes and anything that makes doing the dishes more fun is totally worth it!

The above selection is only a small fraction of what's available on the website, so check it out! Whether you're looking for something fun to add to your kitchen routine, or if you want to frame one and put it on the wall, To Dry For is my ultimate spot for the cutest tea towels either side of the Atlantic! Dry happy, now!

Feed My Face: Açaí Bowls

I'm all about trying new things for breakfast. I get sick of having the same stuff over and over again. Once, when I was probably 9 years old, I got really into Frosted Mini Wheats and ate them every morning and any other chance I got for probably the next two months. It was probably Kellogg's best quarter ever, but after that two months was up I never wanted to eat another Mini Wheat again. The same goes for Texas Toast and Swedish Fish, but that's another story. When the days start to get warmer, I shun my toast and oatmeal for something that is cooling and delicious. I used to just make a lot of smoothies, but I was looking for more. That's when I discovered the Açaí Bowl, or as my coworker and I call it "dessert chili". It was a smoothie, it was granola, it was healthy, all in one bowl. You can make it as simple or as complicated as you want to, but the basic concept is all the same. There's no "right" way to make an Açaí bowl, but here's a guideline as to what you can do to make a really good one!

Açaí Base
1 Package Sambazon Açaí unsweetened Smoothie Pack*
1/2 Frozen Banana
1/2 Cup chopped pineapple (pref. frozen)
1 Tbsp ground flaxseed
Approx. 1 Cup Coconut Water, milk, orange juice, whatever you desire

Blend together until smooth.

Topping Options
Granola (My favorite is Nature's Path Coconut Chia)
Unsweetened Shredded Coconut
Slivered Almonds
Crushed Macadamia nuts
Sliced Strawberries
Blueberries
Sliced Kiwi
Sliced banana
Mango Pieces
Bee Pollen (weird but gives a satisfying crunch)
Raw Honey
Agave (for the vegans)

*Now, if you don't want to shell out the bucks for special Açaí smoothie packs, you can buy the Sambazon Açaí that are almost always on sale at my local grocery store, freeze them in an ice cube tray and use three of those per bowl you're making. Can't find any Açaí where you are? Substitute it for a frozen berry mix. If I can't find frozen Açaí or nothing's on sale, I get a blueberry, raspberry, blackberry, cherry medley and it works really well. Açaí is so popular because of all the antioxidants it packs in; try and get the real stuff if you can, but berry mixes are just as good. Another option if you can't find acai is Pitaya (dragon fruit); it tastes super good, has a fabulous fuschia color, and is really good for you. You can purchase pitaya smoothie packs here!

These bowls are great for breakfast, lunch, dinner, and every meal in between and if you have everything prepped beforehand they can be made pretty quickly. They have quickly become my favorite way to start the day. Açaí bowls have been popping up in shops all over the place, but get adventurous and make your own at home!

Ramblin': What's Going On!

I've been very unmotivated lately. I feel as though I have nothing of substance to write about and I blame it on the weather! Gray skies, snow, clouds, wind; it's enough to make me want to pack up and move to Florida even though Florida is a whole new category of crazy complete with alligators (sorry, Florida).  I have this week off since my boss is jetting of to the British Virgin Islands and shutting down the office (WELL GOOOOOD FOR HIM) and I'm trying to do lots of stuff that I can post about. I've got a couple of new products that I'm really liking and I plan on doing some reviews for those, but right now I'm just in the furious brainstorming phase. I apologize for the lack of content, but there's always a sort of lull between seasons when it come to writing inspiration. The spring stuff is just starting to come out in stores now, so I'll have more to write about once I can get my little hands on it! Until then, enjoy this recipe for an awesome "Don't Feel Too Guilty" about it Cookie Dough Dip! It's made with chickpeas and peanut butter and it's friggin' amazing!

Check out Chocolate Covered Katie's Cookie Dough Dip recipe. Unlike a tube of Pillsbury, it won't make you feel like you're going to die afterwards! I will be back with more content everyone, but until then stay warm!

Absolute Last Minute Gifts: Edibles and DIY!!

If you are still sitting on your ass, stressing about all the shopping you didn't get to do, there are still some things that can be done that will produce gifts that won't look rushed or impersonal. You may even be able to use things around the house, or be able to pick these items up at your local grocery, drug store, or Dollar Store. You really can make a DIY gift that won't disappoint like all those macaroni necklaces your mom threw away decades ago. Here are some Pinterest ideas that people will actually want!

1. Paint-Dipped Bamboo Utensils
This is a pretty cool present for the chef in your family, for new homeowners, college kids, or someone who needs to learn how to feed themselves. Bamboo utensils like the ones above can be bought at your local grocery or dollar store. Just tape off where you want the paint line to end and either use some old house paint or use left over spray paint. Customize to match the utensils to the recipients kitchen. Super cute and easy!

2. Homemade Art Work
Pinterest
Pinterest
It doesn't get much easier than getting a cheap canvas at a local art store, taping off some shapes and painting the whole canvas. Once you lift up the masking tape, you'll be left with some cool, modern-looking, geometric art that can be color-customized to fit your friend of family members home decor. The bottom piece is a canvas that was painted one color, then half was painted over with another and just dry-brushed over the mid-line to create a cool softer edge. I think both projects look really cool and I even have my own tape-off art up in various places in my house. All it needs in the end is a signature!

3. Holiday Food Treats

Photo: Food52
Food is always a crowd pleaser. No matter how much someone tells you they don't want sweets around the holidays, they're just one shitty January workday away from wanting to eat their feelings with reckless abandon! Stick to the basics to make sure it'll go down well. My FVAORITE COOKIES EVER are Cherry Chocolate Chip Cookies and my favorite non-cookie holiday item is peppermint bark. Both are stupid easy to make and will either make a good gift for a foodie friend or acts as a good last-minute filer gift when you feel like you haven't gotten enough for a certain someone. Put it in a cool reusable tin and you've given a gift that keeps on giving!

4. Homemade Bath Products
Photo: Hey Gorgeous
Photo: idlewife
Bath products don't need to be fancy brand in order to be a good gift. Most people will be blown away and think you're some sort of evil genius if you can handcraft them some sort or bath product. The easiest ones to make a body scrubs and bath fizzies. Body Scrubs only need a few ingredients: Sugar/salt, essential oil of your choice, heavier carrier oil, and a jar. THAT'S IT. Bath fizzies really only need Epsom salts, cornstrarch, baking soda, essential oil and a mold. Click HERE for a good bath fizzy recipe that made the cute little disks above and here are a few of my own body scrub recipes to impress your friends!

Margarita Salt Scrub:
1 1/2 Cup Fine Sea Salt
1 1/2 tsp. Lime essential oil
3-4 Tablespoons Grapeseed oil*

Warm Lemon Sugar Scrub
1 1/2 Cup Fine Brown sugar
1 1/2 tsp Lemon essential oil
2 Tsp Lemon juice
zest of 1/2 lemon
3-4 Tablespoons grapeseed oil*

I use grapeseed oil because it is light, unscented, and can be found at the grocery store. Sweet almond oil is also a good choice, but steer clear from heavier and scented oils like Olive or vegetable/canola. Avocado would be acceptable too.
 * If you want a sudsy scrub and not an oily one, replace the grapeseed oil with unscented castile soap (Like Dr. Bronner's)
Adjust the grapeseed oil/castile soap to get the desired consistency!

5. Friendship Bracelets
Pinterest

You know you cranked out thousands of bracelets at summer camp, so why not jump back on the bandwagon in your time of deep desperation. Friendship/diy-esque bracelets are all the rage now, so capitalize on your craftiness and make your friends some cool jewelry if you're stuck with little resources. Visit your local craft store or repurpose an old fake pearl necklace you haven't worn since your sorority formal and make some cool stackable bracelets. Hemp and black/freshwater pearl bracelets look cool an beachy; you can even use thick cords and hex nuts braided together to make a cool metal- accented piece. The possibilities are endless!

Well I hope this helps some of you super late shoppers that don't feel like killing themeselves at the mall all day tomorrow, or just worrying about the sincerity of your gifts. Homemade stuff may sound lame, but you put your time, creativity, and hard-earned cash into to hand-make a special gift for a special person. Enjoy and get crafty!

Let's Have A Protein Party!

No, not the gross kind! The kind that helps build muscle, strengthen your hair and nails amongst other things! If you are a human being, you need protein. You also need a hefty serving of healthy during your day, especially if that weekend may have resulted in a three-burrito-deep food coma with a side of a whole medium pizza. This bar is almost all raw, healthy goodness and it so easy to make and have on hand when the after lunch-before dinner murderous hunger strikes!

Hello, bowl reflection!
The Ingredients:

2 Cups Rolled Oats
2 Scoops protein powder (I used vanilla)
1 1/2 tsp. Sea Salt
2 Tbsp. Chia Seeds
2 Tbsp.Ground Flaxseed
1 Tbsp. Vanilla Extract
2 Tbsp. Raw Honey* (none of that processed shit!)
1/4 Cup Raw Pumpkin Seeds
1/3 Cup Dried Cranberries
1/3 Cup Unsweetened Shredded Coconut
1 Tbsp. Extra Virgin Coconut Oil
1 Cup Peanut Butter (Creamy works best)
OPTIONAL: 1/4 Cup Dark Chocolate Chips

*If you are vegan, use maple syrup in place of honey. Agave can be sweet so stick to maple!

1. Place all of your dry ingredients in your mixer or in a bowl if you are mixer-less.

2. Add your wet ingredients to the dry mixture.
 3. Turn on mixer to medium-low and mix ingredients until well-incorporated or until the mixture begins to stick together.

4. Spray a brownie pan (I used a 6 or 7x 12 pan) with cooking spray. Cut a piece of parchment paper to the size of the bottom of the pan. The spray will help the parchment stick and the parchment will make it easier to get the bars out.  Once everything is mixed together, spoon out the mixture into your pan.

5. Press mixture into the pan firmly to make sure everything stick together. The firmer you press the bars, they better they will stay together. Once the mixture can be packed down no further, place the pan in the freezer for an hour.

6. Once the bars have hardened, cut them into 2x2 inch squares, wrap in plastic wrap or aluminum foil and store in the freezer! As a precaution, I would have added a bit more peanut butter to my batch because these did come out a bit crumbly. As long as I have a napkin around to catch the debris, I'm not worried about it.

Well, there you have it! These protein bars get their protein goodness from the protein powder, the pumpkin seeds, AND the peanut butter and I have been eating them as a pre-workout snack. Great for snacking when you get home when you feel ravenous. There's enough fibre and protein to keep you full until dinner without resorting to eating all the chocolate within a five mile radius. Enjoy!

Eat Up: My Favorite Cookbooks

I know, I know; cookbooks are quickly becoming a thing of the past since tablets have arrived on the scene. They're much easier to stand up on the counter and can play music whilst cooking, but there's something so satisfying about flipping through the pages of a cookbook. Fingering through pages filled with gorgeous pictures delicious food, dog-earring my favorites so I'll have new ideas for dinner, I just love a good cookbook. I have a little collection of them with a few that are standout favorites for recipes as well and leisurely reading on days when I don't want to really think about much more than an awesome sandwich.

The Internantionals

I love food from other places, especially Indian and Mexican food. It may just be rice, meat and vegetables, but it's just the best thing in the world.

1. Everyday Indian- Great quick and easy recipes that show you Indian food doesn't always have to be complicated. Once you have your spice collection, it's really easy to make Indian food from scratch. This book shows you how to make breads, curries, chutneys, and desserts that are all deliciously spicy and flavorful. I have used this book a lot since it also focuses on making healthy Indian choices rather than relying on takeaways that usually have a buttload of oil in them.

2. Rick Bayless Everyday Mexican- All the recipes in this book look friggin' awesome. Whether it's homemade refried beans or more traditional recipes, Everyday Mexican gives you the ability to have a Mexican feast in your very own home. No embarrassing sombrero wearing birthdays here! Bayless also focuses on the healthier side of Mexican cuisine, not the cheesy mess we sometimes find at restaurants.

3. Eat Right For Your Body Type- Okay, Ayurveda, the traditional medicine of India may not appeal to everyone, but this book focuses on how people should eat in relation to their body type. She gives tips on how the three doshas (pitta, vata, kapha) keep all of their tendencies in balance and it's as simple as following certain dietary principles. Even if you don't buy into the whole dosha thing, she's got some amazing recipes in here that are all deliciously Indian and healthy. This book is great for a light meals that won't make you feel like a lazy lump after consumption.

The Specialists

I am not a vegan or vegetarian; this is well documented upon watching me eat chicken nuggets, but I do like vegan and veggie cookbooks because they help me add more fruit and veg to my diet. They even help me create my favorite meaty dishes sans meat which can lead to fewer calories, yay!

1. The Vegan Table- This book has whole vegan meal plans for every season, holiday, and dinner party situation that you can think of (hello trendy vegan Passover Seder!). I use this when I want to find replacements for stodgy comfort foods like meatloaf and spaghetti when I'm feeling a little less light on my feet. It's a great guide for having veggie friends over for dinner.

2. Moosewood Restaurant Low-Fat Favorite- This awesome book is totally vegetarian and low-fat and compiles lots of light and hearty recipes into one book. I made the veggie feijoada and it was amazing, it's now a E. By The Sea dinnertime favorite. It has soups, it has sandwiches, all the things your veggie heart desires!

3. The Best of Clean Eating- trying to lose the pudge (raises hand), want all the recipes but too cheap to buy all the magazines (raises hand again), then buy this book composed of recipes from Clean Eating Magazine. All of the recipes in this book are muscle-building friendly and won't leave you wishing for more food like some other diet cookbooks do. It has meaty, veggie and sweet-filled recipes for every occasion and makes eating well a little easier and more tasty than plain egg whites and grilled chicken breast.

Honorable Mentions

It's not that these are not special, they just don't fit into a certain category. They are eclectic and great in their own way!

1. The Family Chef- If you've got litlins', big hungry men, and a love for SoCal style cuisin, this book is perfecto (almost typed 'perfucto'). These ladies used to cook for Jennifer Aniston and since Jennifer Aniston looks better than me at 40 it must be good stuff. The food ranges from Mexican-inspired dishes like tostadas and quesadillas to pasta and steaks. All of it easy to makes and all of it healthy.

2. The Encyclopedia of Sandwiches- The name should speak for itself. Anyone who doesn't like sandwiches is no friend of mine because I'm obsessed with them. This book has just about every sandwich every created and some that I'm convinced were just made up (though there is no grilled Charlie!). This one is fun to flip through when I'm daydreaming of sandwiches (which happens more than what may be healthy), and gives me ideas for packed lunches when my live-in lover and I go on hikes.

3. Cook This, Not That- This recipe book does society a huge service: it takes every horrible, gut-busting food item you can think of and reinvents it in a healthier way. The recipes are crazy good and don't even make you miss the bad ones, some of them are even better. They show you how many calories you would be consuming if you were eating the original food item as opposed to the lightened version and it really makes you think about the choices you make.

Since this post was exceptionally long I'm not taking the time to put links to where these can be purchased. I got them all from amazon.com where they were used and half the original price. Do yourself a favor and learn how to cook a few really good meals and you'll be surprised how easy it is to bring more recipes into your repertoire. Lighten up and make your own food!

No Case of the Mondays Here!

My boss's son got married over the weekend and decided to take Monday and Tuesday off which means my life won't suck until Wednesday! Today started out productive, then tapered off into laziness, and ended on a productive note. I finally came around to getting my boyfriend to get a picture of me in my new shoes and jacket which then reminded me I'm probably the most un-photogenic person ever born.

Here are my new Toms. I've never owned a pair because I thought they looked as thought they'd be flimsy and too flat to be comfortable, but I really like them! It doesn't hurt to have an awesome print like this too.

After multiple attempts and failing to perfect the sock bun, I went to get food for lunch. Here's your favorite dum-dum in her new fjallraven Crinan jacket, Zara t-shirt, Levis jeans, and Toms shoes. I wore this fabulous ensemble on my way to pick up lunch. Please ignore my double chin :(

Later on, I decided to make another batch of body lotion using a bunch of fabulous skin care ingredients. This recipe had acai and cupuacu butter, plus avocado and pomegranate oil to keep me from looking like a scaley mess. No ashy elbows here!

And just as every good day off should end, I made some buttermilk biscuits from scratch. They're buttery, unhealthy, warm, and ready for a drizzle of honey tomorrow morning at breakfast.

It may not have been the most exciting day ever, but my sun-room is rid of dead plants, my house smells like biscuits and I even got a nap in. Not every day has to be earth-shatteringly crazy to feel productive and sometimes you have to break down and clean your gross shower drain hair-catcher, because now I don't have to do it tomorrow. Be productive people!
